dao huay zhui = dou4 hua1 shui3 = soya bean drink/milk
Today I had a really interesting experience, of watching this uncle set up and prepare his soya bean stall. Me, Sheena and Cheng Yao were at Tiong Bahru Market eating dinner, and sometime around 10PM this uncle came and started doing his stuff. Right in front of our table! No need to watch documentary, here got live performance. It was really interesting, the way he cooked the tang2 shui3 (syrup) and put the beans into a machine to grind into a white paste, which he then transferred to another machine to mix with water. Occasionally he'd reach into the mixing machine and take out what looked like curds leftover from the churning of the soya bean paste and water, and throw them into white styrofoam boxes. I don't know what they're for, but I think they can be resold or reused.
The raw soya bean milk he poured into buckets. It was very foamy. In fact it looked like a giant (plastic red) mug of beer, with the foam head sitting on top. We watched him for the longest time, somewhat awed by all the work this one skinny uncle was doing. And the smells were wonderful; the sticky sweet smell of the syrup (like cotton candy) as he filtered away the extra crystallised sugar which wouldn't dissolve, the soya bean smell, and the smell of pandan leaves, which he used to cook the syrup. There was a yong tau fu stall making the red sweet sauce and we could smell that too, and then also when they were frying onions. It was a really interesting experience, a bit surreal, somehow. Through it all, we talked. About many things. I really enjoyed myself. :)
